the alternative Dr. Dave salad

 

This is the alternative salad I make when I want to shake it up from his usual dinner salad!

 

INGREDIENTS

 
 

Servings: 1

curly parsley

kale

cucumber

tomatoes (whatever is in season)

kalamata olives

feta

garbanzo beans

red onions

quinoa (1/4 c cooked)

1/2 avocado

10 red grapes (adds that little bit of sweetness)

DRESSING

Lemon juice (use the juice from one lemon)

1/4 cup Olive oil

1 teaspoon Minced garlic

Sea salt to taste

Black pepper to taste

1 teaspoon Dijon mustard (optional)

 METHOD

 
  1. First, make quinoa according to instructions on the pack.

  2. Chop vegetables (greens, tomatoes, cucumbers, onions) and place into a bowl.

  3. Add garbanzos, olives, feta and quinoa, avocado and cut up grapes.

  4. Toss together.

  5. Add dressing and toss again.
