Blueberry crisp

 

INGREDIENTS

 
 

2 frozen packages of organic blueberries (20 oz total needed)

1/2 lemon

1 cup oats

1 cup all purpose GF flour or flour of your choice

1 tbsp coconut flour

1/4 cup maple syrup

1/4 cup coconut oil

1 tbsp just date syrup

 METHOD

 
  1. Preheat oven to 350 degrees.

  2. Place frozen blueberries in a 8x8 baking pan.

  3. Sprinkle coconut flour over blueberries.

  4. Squeeze 1/2 of a lemon and add juice to blueberries.

  5. Mix by hand.

  6. In a separate bowl, sift flour and set aside.

  7. In a microwaveable dish Melt 1/4 cup of coconut oil.

  8. In a bowl combine sifted flour, coconut oil, oats, maple syrup: mix well.

  9. Add oat topping to blueberries making sure to cover all the blueberries.

  10. Bake for 45 minutes.

  11. Enjoy alone or with some yogurt for breakfast or a snack!
