Chocolate covered rice cakes

 
 

INGREDIENTS

 
 

rice cakes

semi sweet chocolate ( I use Lilly’s or Enjoy life-less sugar)

coconut oil

date syrup

Optional toppings:

banana

 METHOD

 

 

  1. Melt your chocolate chips and add in approximately 1 teaspoon coconut oil which helps to keep the chocolate smooth and easy to use. Depending on how much chocolate you use, you may need to add a little more coconut oil. Go slowly. Be careful not to burn your chocolate while melting!

  2. Simply drizzle chocolate onto cake or dip half of cake into chocolate to coat one side.

  3. If you want to use fruit like banana, cut thin slices, place on rice cake, drizzle chocolate, add date syrup.

  4. After adding chocolate, place in refrigerator to allow chocolate to harden.

  5. Enjoy!
