quick and easy chopped greek salad

 
 

INGREDIENTS

 
 

1 organic cucumber, quartered and diced

1 pint organic grape tomatoes halved

1 organic green pepper diced

1/2 organic red onion diced

1 can organic chick peas, drained and rinsed

1/4 cup crumbled feta (optional)

1/4 c olive oil

1/4 c fresh squeezed lemon juice

Salt and pepper to taste

 METHOD

 
  1. Toss all ingredients together and refrigerate for at least one hour.

  2. Serve with toasted pita.
