Cookie Dough Protein balls

 
 

INGREDIENTS

 
 

1/2 cup almond butter or peanut butter

1/2 cup vanilla protein powder or plant-based protein powder to make dairy free

1/3 cup coconut flour plus 1-2 tablespoons additional as needed

1 1/2 tablespoons pure maple syrup

1 teaspoon pure vanilla extract

1/4 teaspoon cinnamon

2-4 tablespoons unsweetened vanilla almond milk

2 tablespoons dark chocolate chips

 METHOD

 
  1. In a large bowl, add the almond butter, protein powder, 1/3 cup coconut flour, maple syrup, vanilla extract, cinnamon, and 2 tablespoons of almond milk.

  2. Stir until the mixture forms a dough that is soft enough to roll into balls, but not overly sticky.

  3. Add additional coconut flour or almond milk as needed to get the right consistency.

  4. Stir in the chocolate chips.

  5. Roll into 12 balls.

  6. Enjoy immediately or store in the refrigerator for later.

Coconut flour is the most high protein and low carb option for these protein balls. It is also grain free.
