FALAFEL OVER GREENS WITH TAHINI DILL DRESSING

 

INGREDIENTS

 
 

Falafel balls:

1 15oz can of chickpeas

1/3 cup chopped fresh parsley

1 medium white onion

2 tbsp chopped nut of choice

2 tsp cumin

1.5 tsp garlic powder

1/2 tsp ground coriander

salt and black pepper to taste

4 tbsp flour of choice

bread crumbs, optional coating

 

Homemade Tahini Dill Dressing:

1/4 cup tahini

1 tbsp lemon juice

1/2 tsp dried dill

1/4 tsp paprika

pinch of salt

 

 METHOD

 
  1. Combine all ingredients except flour and breadcrumbs into a food processor or high speed blender.

  2. Blend until thoroughly combined.

  3. Pulse 1 tbsp of flour in at a time until the dough is crumbly and you can mold it into a ball without residue on your hands.

  4. Refrigerate for 1-2 hours to harden.

  5. Scoop into 12 balls, roll in breadcrumbs, if using.

  6. Bake at 400 degrees F for 30 minutes, flipping halfway.

THE DRESSING:

  1. Combine ingredients.

  2. Add 1 tbsp of water at a time and stir until desired consistency.
