Hearty winter salad

 

I love this salad anytime but it especially appeals in Fall or winter on a cold day/night. The nuttiness of the farro combined with the walnuts and sweetness from the cranberries and sweet potatoes along with the creaminess from the feta-it's SO good!

 

INGREDIENTS

 
 

3 cups salad greens (chose either: spinach, kale or arugula)

1 large sweet potato

1/2 cup walnuts

1/2 cup feta cheese

1/2 cup dried cranberries

1 1/2 cup farro

salt and pepper to taste

Dressing

either: balsamic of your choice OR…..

3 tbsp of olive oil

3 tbsp of apple cider vinegar

1-2 teaspoons honey

 METHOD

 
  1. Cook farro (according to package instructions) takes approximately 25 min. Allow to cool.

  2. Microwave sweet potatoes until soft. Allow to cool. Dice into bit size pieces-no skin.

  3. Combine ingredients: greens, cranberries, walnuts, farro, sweet potatoes. Add feta in last.

  4. Add dressing and toss well.

makes 2 large main dinner salads or 4 side salads.
