Lemon LOVE cookies

 

INGREDIENTS

 
 

For the Cookies:

2 1/4 cups all-purpose GF flour

1/2 teaspoon baking powder

1/2 teaspoon salt

3/4 cup monk fruit (can use regular granulated sugar or substitute of your choice)

2 tablespoons lemon zest

1 cup unsalted butter

1 large egg

1 teaspoon vanilla extract

 

For the Glaze:

1 cup powdered sugar

4-5 teaspoons fresh lemon juice

 METHOD

 
  1. Preheat the oven to 350 degrees.

  2. Remove butter from refrigerator and allow it to get to room temp.

  3. Line baking sheet with parchment paper. Set aside.

  4. Combine flour, baking powder, and salt in a small bowl. Whisk and set aside.

  5. In a small bowl, add monk fruit and lemon zest. Rub the sugar and lemon zest together with your fingers, until fragrant.

  6. Beat butter with electric mixer.

  7. Add in sugar/lemon mixture and mix together until light and fluffy.

  8. Beat in egg and vanilla extract. Mix until smooth.

  9. Slowly beat in flour mixture on low speed until blended.

  10. Place dough (approximately 1 tablespoon for each cookie) onto prepared baking sheets, spacing several inches apart. Gently flatten dough with the palm of your hand.

  11. Bake for approximately 12-15 minutes or until cookies are just set and slightly golden brown.

  12. Allow cookies to cool completely.

    For the glaze:

  13. In a medium bowl, whisk together powdered sugar and lemon juice. Using a teaspoon, put glaze on top of each cookie and spread to cover.

  14. Refrigerate until glaze hardens and then can remain out of refrigerator.
