Yogurt parfait with berry compote

 

INGREDIENTS

 
 

1 c chopped strawberries

1 c blueberries

1 c raspberries

1 T Turbinado sugar

1 T fresh lemon juice

2 c Greek or non dairy yogurt

2 t grated ginger root

1/4 cup chopped nuts or granola of your choice

 METHOD

 
  1. Place all berries, sugar and lemon juice in a saucepan over medium heat. Simmer berries 8-10 min until they breakdown and juice thickens and then place in fridge.

  2. Combine yogurt and ginger in a small bowl. Once the compote is completely cooled you can assemble the parfaits in a small glass or dessert bowl. Start with a spoon of the compote on the bottom and then layer with yogurt. Finish with a spoon of compote topped with nuts or granola.
