Peanut butter coconut fudge
INGREDIENTS
2 cups of unsweetened coconut flakes
1 cup of PB2 powder peanut butter (Can use regular peanut butter if you prefer)
1/2 cup melted coconut oil
3 tbsp maple syrup
1/2 tsp sea salt
1 tsp vanilla extract
1/4 cup of Enjoy Life mini Chocolate chips
METHOD
This creamy peanut butter fudge is a perfect plant based dessert that regardless of your dietary lifestyle you will enjoy!
Line a 9x5 loaf pan with parchment paper.
In a food processor, blend coconut flakes on high for approximately 4 minutes until almost creamy. Add in peanut butter. Mix.
Add in melted coconut oil. Mix.
Add in sea salt and vanilla and maple syrup. Mix.
Add in chocolate chips. Mix.
Transfer mixture into loaf pan and spread evenly.
Place in freezer until firm: approximately 20 minutes.
Use a plastic knife to cut into squares.
Makes 20 pieces.
