Pina Colada on a plate

 

INGREDIENTS

 
 

1 fresh pineapple sliced

1/2 t cinnamon

1 can unsweetened coconut milk

3 T confectioners sugar

1/3 c sweetened coconut flakes

 METHOD

 
  1. Place can of coconut milk in the fridge overnight. Try not to shake or move it.

  2. Toast coconut flakes in a small pan over medium heat until they are brown/toasted to your liking.

  3. Lightly oil a grill pan or outdoor grill and preheat on medium. Sprinkle pineapple slices with cinnamon and grill approximately 3 minutes on each side.

  4. Open the can of coconut milk and spoon the thick cream on top into a bowl. Add the sugar and use a hand mixer to beat on high until thick and creamy.

  5. Place a dollop of coconut cream on each pineapple slice and sprinkle with toasted coconut flakes.
