Easy vegan cashew queso

 

INGREDIENTS

 
 

3/4 - 1 cup hot water

1 cup cashews

1/2 tsp chopped fresh garlic

2 Tbsp nutritional yeast

1/2 tsp ground cumin

1 tsp chili powder

1/2 tsp salt

1/2 tsp harissa

 METHOD

 
  1. Add all ingredients to the blender, starting with ¾ cup of water and blend until creamy, adding more water if necessary to blend until smooth.

  2. You want the queso to be pourable. If it gets too thin, add more cashews.

  3. Taste and adjust the flavor if needed.

  4. Serve with grain-free chips or add to quesadillas or tacos. Garnish with more of the above spices or a dollop of your favorite salsa.
