spicy baked tofu and broccoli salad
INGREDIENTS
1 block firm tofu
For The marinade:
2 tbsp oil
3 tbsp sriracha
1 tbsp low sodium soy sauce/tamari
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp smoked paprika
Veggies:
Broccoli and Broccoli Stalks
METHOD
Baked Tofu
Drain and squeeze all water out of firm or extra firm tofu.
Cut into 1/2 inch thick strips.
Brush with marinade
Bake at 385 degrees F for 45 minutes, flip halfway through and brush with rest of the marinade.
For the Marinade:
Combine all ingredients.
Roasted Broccoli and Broccoli Stalks:
Toss bite-sized pieces with salt and pepper, to taste.
Sprinkle with water.
Roast at 385 degrees F for 25 minutes, flip halfway and sprinkle with more water if the stalks are looking dry.
