spicy baked tofu and broccoli salad

 

INGREDIENTS

 
 

1 block firm tofu

For The marinade:

2 tbsp oil

3 tbsp sriracha

1 tbsp low sodium soy sauce/tamari

1/2 tsp garlic powder

1/2 tsp black pepper

1/2 tsp smoked paprika

Veggies:

Broccoli and Broccoli Stalks

 

 METHOD

 

Baked Tofu

  1. Drain and squeeze all water out of firm or extra firm tofu.

  2. Cut into 1/2 inch thick strips.

  3. Brush with marinade

  4. Bake at 385 degrees F for 45 minutes, flip halfway through and brush with rest of the marinade.

For the Marinade:

  1. Combine all ingredients.

Roasted Broccoli and Broccoli Stalks:

  1. Toss bite-sized pieces with salt and pepper, to taste.

  2. Sprinkle with water.

  3. Roast at 385 degrees F for 25 minutes, flip halfway and sprinkle with more water if the stalks are looking dry.
