sweet spring salad

 
 

INGREDIENTS

 
 

2 Cups Spring Mix (or lettuce of choice)

1/2 Cucumber, sliced

1/2 Ripe Avocado, sliced

1/4 Cup Dried Cranberries

1/4 Cup Pumpkin Seeds

DRESSING (single serving)

5 tbsp. Extra Virgin olive oil

2-3 tbsp. Pure Maple Syrup (more/less depending on sweetness preference)

1 tbsp. Apple Cider Vinegar

1/2 tbsp. Organic Honey

1/2 tbsp. Stone Ground MustarD

 METHOD

 
  1. Set aside small bowl for dressing ingredients - First pour amounted olive oil into small bowl, then slowly whisk in mustard, vinegar, honey, and maple syrup to taste, until desired consistency (in that order).

  2. In a large bowl, add washed spring mix, sliced avocado and cucumber.

  3. Top with cranberries & pumpkin seeds as desired.

  4. Enjoy!
