Vegan, gluten free, freezable, healthy, quick, protein-rich.

INGREDIENTS

 
 

1 can (280g) chickpeas, drained and rinsed 

1/2 medium onion

1 clove garlic 

1 tsp cumin 

1/2 tsp ground oregano

1/2 tsp parsley 

1/2 tsp paprika 

1/4 tsp smoked paprika

1/4 tsp cayenne pepper (for optional spice)

salt and pepper to taste 

1/3 cup rice flour

1 cup corn*

1 bell pepper, chopped* 

Optional additions:

vegan cheese sauce to dip

hummus to spread on top

your favorite hot sauce 

*these veggies can be substituted with others of similar size and texture like peas, chopped zucchini, etc.

 METHOD

 
  1. Add all ingredients except rice flour, corn, and bell pepper into a food processor or high-speed blender.

  2. Add rice flour and blend again.

  3. Transfer mixture to a bowl, and mix in corn and bell pepper.

  4. Form 8 patties, about 1cm thick.

  5. Pan fry both sides with oil of choice, or brush lightly with oil and bake at 190°C for 15 minutes on each side (or until desired crispness).
