watermelon pizza
INGREDIENTS
1 20 - 25lb seedless watermelon
2 cups cilantro leaves
6 ounces queso fresco
1/4 cup honey
fresh lime wedges (as garnish)
sweet pickled red onions
1 medium red onion (thinly sliced)
1/2 cup white vinegar
2 tablespoons fresh lime juice
1 tablespoon honey
1 1/2 teaspoons kosher salt
METHOD
Slice a seedless watermelon into 1 inch thick slices.
Make pickled onions by slicing onion and placing into mason jar. Cover with vinegar, lime juice and kosher salt.
Stir all remaining ingredients together in a bowl. Cilantro, feta cheese, pickled onions.
Heat grill. Drizzle honey over watermelon and place on hot grill for 2 minutes.
Sprinkle grilled watermelon with mixed toppings.
