Winter citrus salad

 

Who says fruits are just for summer?!? In fact, it's important to get your fruits and vegetables in every day and incorporating fruit into a salad is a great way to do it!

 

INGREDIENTS

 
 

3.5 oz arugula

1 avocado

1 orange

1 blood orange

1 grapefruit

⅓ cup walnuts

Dressing

2 tbsp olive oil

2 tbsp orange juice

1 tsp Maple syrup

salt & pepper

 METHOD

 
  1. Roughly chop and toast the walnuts in a skillet over medium heat until golden brown and fragrant.

  2. Finely slice the avocado. Peel and slice the oranges and grapefruit.

  3. Press excess orange juice from the peel to use for the dressing.

  4. In a small bowl, whisk together all dressing ingredients, and season with salt and pepper.

  5. Arrange arugula, avocado, oranges, and grapefruit on a serving platter.

  6. Top with toasted walnuts and drizzle with the dressing.

FOR DINNER:

Top it with protein to serve as a dinner for two! Protein suggestions: quinoa, grilled chicken, salmon, or shrimp, or vegan feta cheese.
